By which I mean roads that aren't felt to warrant a mention on the motorway mainline advance signage, though they will probably feature on the slip road "map" sign.
On M6, I can think of the following instances:
At J2, B4069 (the old A46) is omitted), but M69, A46 and A4600 are shown depending which way you are travelling.
* At J3, I think B4113 is left off, while A446 is given pride of place.
* At J5, B4114 doesn't warrant inclusion, though it's possible that the spur leading to it from the junction is part of A452.
* At J6, A5127, which is fully accessible from the roundabout below the tangle of Spaghetti, is excluded.
* At J10, B4464 joins the roundabout - however access to it is for buses and taxis only, so maybe this is correct.
* At J11, the presence of A462 is kept quiet while A460 hogs the limelight.
* At J14, A34 used to have sole billing, northbound at least. Maybe this has changed and A5013 is shown, can someone confirm?
* At J15, A500 is signed (it used to be A34 originally), but the junction slips all lead to a roundabout where A519 is also quietly connected.
* At J16, it's A500 again, and B5078 which leads to Alsager's Bank is deemed too unimportant to feature.
* At J20, I dont think the signs mention B5158, which connects directly to one of the roundabouts.
* At J21, I don't recall ever seeing B5210 signed, though as this is fairly new that may have changed.
* At J23, A580 is the only road signed. A49 also passes through this junction but you don't see that unless you exit.
* At J34, I'm not sure whether A589 has yet made it onto the advance signage.
* At J38, I can't remember whether B6260 is signed. That I can't remembe suggests that it isn't, but I'm happy to be corrected.
* At J39, I think the signage says (A6), with B6261 ignored.
* At J40, my memory is that A66 gets all the headlines, and A592 is sold short.
* At J42, I'm unsure whether B6263 is included as well as A6.
Of course there are plenty of examples of this on other motorways. Over to you ...

M62 junction 24 - A643 is omitted, both directions
M62 junction 26 - A58 is omitted eastbound, A638 is omitted westbound
M62 junction 27 - M621 is omitted westbound (probably for the best, as you have to go through 11 sets of traffic lights to get to it)
M62 junction 28 - A650 is omitted, both directions
M1 junction 36 - A6135 and A6195 are omitted, both directions

The southbound ones are a cock-up anyway, the 'floppy' is drawn really badly as well.

Junction 14 is still signed for the A34 only.
The B5158 is signed southbound at Junction 20 as the exit for Lymm, but the B5158 is not signed northbound.
Junction 38 is signed for Brough A685 and Appleby B6260 northbound, but the B6260 is not signed southbound.
Junction 39 is still signed as (A6)
Junction 40 is still signed for the A66 only.
Junction 42 is still signed for the A6 only.
At Junction 44, the A689 is not signed northbound.

Thinking about the M5 locally:
- At J1, A41 is the headline act, with A4252 not shown - and when it does appear on the slips the painted numbers on the road mislabel it A4168 (which is in Dudley!)
- At J2, A4034 is omitted, despite being two arms of the roundabout, the same number as A4123.
- At J6, A4440 has yet to appear on the signage.
- At J7, A44 is signed, but B4084 is not.

The A6193 is not signed from the M62 in either direction at Junction 21. The eastbound gantry signs refer to Milnrow, Shaw (A640) even though you have to drive for several hundred yards along the A6193 to reach the A640.
On the A74(M) and M74 in Scotland:-
Junction 20 (Ecclefechan). The B725 is not signed at all.
Junction 13 (Nether Abington). The B7078 is not signed at all.
Junction 12 (Millbank). The B7078 is not signed northbound, although you need to use the B7078 to access Cairn Lodge Services.

That's an interesting one as the A5013 isn't signed from the A34 either!

The B5078 leads to Alsager. Alsager's Bank is a different (and definitely unimportant) place a few miles away.

The A91 is the only road signed at both Junction 9 of the northbound M9 and Junction 9 of the northbound M80 at Pirnhall. The A872 Bannockburn to Denny road is only signed from the southbound M9.

M2 J3 A2045 is omitted from signage at the J3 despite having a D2 spur that meets it even the B2097 which terminates nearby gets a mention even though it doesn't quite reach the M2
Not numbers but destinations, coming out of London on the M4 J5 is not signposted for Slough, only for Langley, a local suburb, although it's the only sensible junction for the centre of Slough and universally used - J6 puts you in way past the centre.

But it's not singed anywhere, and some may argue it no longer exists due to the fact it was never completed. Most maps still show it though.
