Just looking through them. Seaton Burn definitely needs a link from the A1(S) to the A1068. It's quite a busy route with 15k vehicles and they're all heading to the A1 pretty much as it makes no sense travelling along there to other places. Wouldn't cope using the single lane over by the services.
For Moor Farm I'd say something like this, quite simple really but sorts out the two minor roads joining and only involves the one Bridge over the top so there's not much spend on lots of bridges. Being local the A1171 and Annitsford junctions are horrid to join and badly need removed and most routes are freeflow bar the A189(N) to A19(N) and A19(S) to A189(N)
Not a fan of the crossroads idea though mind, not sure that would work well in the future and we'll just end up with a Downhill problem at the other side of the water, which was a much much quieter road.

I like your Seaton Burn design, but it's maybe a bit of a long way round for some of the A1068 movements. As A1(S) to/from A19 is dominant, the best approach may be to freeflow that and leave everything else as it is:
